Was bietet sich bei diesen Temperaturen besser an als ein Frischer kühler Salat zum Abendessen. Und dazu mag ich gerne ein leckeres knuspriges Brot!
Nachdem ich mich in der letzten Zeit dem Urgetreide Dinkel etwas mehr zugewand habe, habe ich folgendes Rezept zusammengestellt.
Jetzt ist es ziemlich "Nachbacksicher" und ich kann es mit ruhigem Gewissen hier vorstellen.

3 Gramm Hefe
300 Gramm Weizenmehl 550
185 Gramm Wasser
5 Gramm Salz

Gesamter Vorteig
100 Gramm Dinkelsauerteig TA 100(oder Wiezenst.)
50 Gramm Roggenmehl 997
450 Gramm Dinkelmehl 630
10 Gramm Hefe (frisch)
10 Gramm Salz
275-300 ml Wasser

520 ml Wasser
850 Gramm Mehl

Aus den Zutaten Vorteig bereiten, 1h gehen lassen, zusammenschlagen
und für 24h-48h in den Kühlschrank stellen.
Am Backtag 1h vorher den Vorteig aus dem Kühlschrank holen.
Sauerteig und Hefe mit dem Wasser mischen. Mehl zufügen und 5 Min
auf kleiner Stufe kenten. Den Vorteig in kleinen Stücken und Salz
zufügen und weitere 10 Min. langsam kneten.
Den Teig in eine eingeölte Schüssel legen und ca 45-60 Minuten gehen
lassen, das Teigvolumen sollte sich ungefähr verdoppeln. Den Teig
auf die bemehlte Arbeitfläche kippen, auseinanderziehen und
zusammenfalten (stretch and fold), dies noch 2-3x nach jeweils 20-30
Minuten wiederholen.
Backofen mit Backstein rechtzeitig auf 240°C vorheizen.
Den Teig schonend 4-teilen (Teigeinlage ~350 Gramm) rund wirken und
5-10 Minuten mit feuchtem Tuch abgedeckt ruhen lassen, dann zu
Baquettes formen.
Auf einem großen Küchentuch das faltig zusammengezogen und gut
bemehlt ist (Couche) nochmals ca. 20 Minuten gehen lassen.
Die Brot mit einem mit Backpapier belegten Brotschieber einschiessen,
vorher einschneiden und mit Wasser absprühen.Backofen beschwaden,
nach 10 Min die Brote nochmals mit Wasser abstreichen oder besprühen,
nach 15 Min. Schwaden ablassen und Temperatur auf 190-200 reduzieren.
Backzeit ca. 30-35 Min.
